Eirini Karastergiou is a Greek former swimmer born on November 20, 1982, who specialized in backstroke events. She previously held records in the 100 m and 200 m backstroke which were broken in 2009. Karastergiou competed at the 2004 Summer Olympics in Athens, qualifying with FINA B-standard times. She placed seventh in her 100 m heat and thirtieth in the 200 m preliminaries. Despite not advancing, she represented Greece at her home Olympics.
