He served in World War II and later established a chain of self-service supermarkets in South Australia, becoming a prominent community figure. Active in charitable work, he was involved with Rotary and received several accolades, including being named Elizabeth's Citizen of the Year in 1976. Knight was awarded the Medal of the Order of Australia posthumously in 1990. His legacy continues through the H.R. Knight Memorial Trust and local reserves named in his honor.
