Shingo Modegi was a Japanese chef born on March 28, 1911, in Mita, Tokyo. He is best known as the founder of Taimeiken, a long-standing Western cuisine restaurant located in Nihonbashi, Tokyo. Modegi significantly contributed to the culinary scene in Japan and is remembered for his role in establishing a legacy that continues to this day. He passed away on June 1, 1978.
