Jankhöfer represented the East German national handball team at the 1972 Munich Olympics, scoring four goals in four matches. After retiring from active play, he transitioned to coaching, leading teams such as Einheit Halle-Neustadt and ZAB Dessau in the first and second leagues, and HG 85 Köthen, where he achieved promotion to the DDR-Oberliga from 1988 to 1990.
