Susumu Koyama is a Japanese pastry chef and artisan chocolatier, founder of Pâtissier es koyama. He has been a regular exhibitor at the Salon du Chocolat in Paris since 2011, achieving a top ranking of 5 tablets and a gold tablet in the Guide des Croqueurs de Chocolat. Between 2013 and 2017, his work received numerous awards at the International Chocolate Awards. He has also authored several books, including pastry recipe books and business books.
